Fresh From The Garden Olive Toss

Delicious vegetable toss from Lindsay Olives. Cool and refeshing.
Ingredients:
1/2c black ripe pitted olives,drained,coarsely chopped
1/2c green ripe pitted olives,drained,coarsely chopped
1 small celery stalk,diced
1 med carrot,diced
1/4 sweet onion,diced
1/2 cucumber,peeled,seeded and diced
1 small green zuchini ,unpeled and diced
1 small yellow squash,unpeeled and diced
12 cherry tomatoes,halved
2tbs fresh chopped parsley
2tbs fresh chives,thin sliced or 2tbs dried chives
1tbs finely shredded lemon peel
4tbs extra virgin olive oil
2tbs fresh squeezed lemon juice
salt and pepper to taste
Directions:
1. In medium bowl,combine olives,celery,carrot,onion,cucumber,zucchini,yellow squash,tomatoes,parsley and chives. Add lemon peel,lemon juice and oil to bowl;mix well. Add salt and pepper to taste.
2. Will keep 7 days in refrigerator.
