Fresh From The Garden Olive Toss |

Delicious vegetable toss from Lindsay Olives. Cool and refeshing. Ingredients:
1/2c black ripe pitted olives,drained,coarsely chopped |
1/2c green ripe pitted olives,drained,coarsely chopped |
1 small celery stalk,diced |
1 med carrot,diced |
1/4 sweet onion,diced |
1/2 cucumber,peeled,seeded and diced |
1 small green zuchini ,unpeled and diced |
1 small yellow squash,unpeeled and diced |
12 cherry tomatoes,halved |
2tbs fresh chopped parsley |
2tbs fresh chives,thin sliced or 2tbs dried chives |
1tbs finely shredded lemon peel |
4tbs extra virgin olive oil |
2tbs fresh squeezed lemon juice |
salt and pepper to taste |
Directions:
1. In medium bowl,combine olives,celery,carrot,onion,cucumber,zucchini,yellow squash,tomatoes,parsley and chives. Add lemon peel,lemon juice and oil to bowl;mix well. Add salt and pepper to taste. 2. Will keep 7 days in refrigerator. |
