5 cups fresh corn kernels |
2 cups finely-chopped onions |
1 cup chopped red pepper |
1/2 cup chopped green pepper |
1 tablespoon dry mustard |
2 tablespoons celery seeds |
4 teaspoons salt |
1 cup dark brown sugar |
2 cups cider vinegar |
Directions:
1. Place all ingredients in a stainless steel or enameled saucepan (do not use aluminum) and bring to a boil over high heat, stirring occasionally. 2. Reduce heat, cover partially and simmer 20 minutes. 3. Ladle into hot, sterilized jars to 1/8-inch of the top, seal. |
