Fresh Corn Relish

Ingredients:
5 cups fresh corn kernels
2 cups finely-chopped onions
1 cup chopped red pepper
1/2 cup chopped green pepper
1 tablespoon dry mustard
2 tablespoons celery seeds
4 teaspoons salt
1 cup dark brown sugar
2 cups cider vinegar
Directions:
1. Place all ingredients in a stainless steel or enameled saucepan (do not use aluminum) and bring to a boil over high heat, stirring occasionally.
2. Reduce heat, cover partially and simmer 20 minutes.
3. Ladle into hot, sterilized jars to 1/8-inch of the top, seal.
