FRESH CORN GRIDDLE CAKES WITH PARMESAN AND CHIVES This recipe came from an estate sale. I obtained it when I purchased the family collection from the Metzger Estate in Grand Prairie, Texas in 1994. Ingredients:
4 medium ears corn |
1 large egg |
1/4 cup flour |
1/4 cup grated parmesan cheese |
1 tablespoon snipped fresh chives |
1/2 teaspoon salt |
1/2 teaspoon freshly ground black pepper |
1 tablespoon unsalted butter |
Directions:
1. Remove husks and silks from corn then grate on large holes of box grater until cobs are clean. 2. Stir in egg, flour, cheese, chives, salt and pepper until batter is smooth. 3. Melt butter in a large non stick skillet then fill a 1/4 cup measure with batter. 4. Use a rubber spatula to scrape batter into pan to form a round cake. 5. Repeat using all batter then cook over medium heat 10 minutes turning once. 6. Serve immediately. |
