Light crunchy balls of dough studded with corn. Ingredients:
oil for frying. (i prefer corn oil) |
3 cps flour |
1tbs baking powder |
1 tsp salt |
3 lightly beaten eggs |
1 cp milk |
4 ears fresh corn |
1 tsp sugar |
Directions:
1. heat oil in heavy pan to 400 degrees 2. cut corn from cob. Scrape cob to get all the milky juices 3. add beaten eggs and milk 4. Stir to break up corn and mix milk and eggs 5. add flour, salt, baking powder and sugar 6. mix lightly just to moisten. 7. If it is to wet add a little flour to create a fairly stiff batter. 8. Allow to sit for fifteen minutes untill batter is covered with small bubbles. 9. Drop by teaspoon fulls into hot oil. 10. Fry about 2 1/2 minutes on side one and flip and do the same on the other side. 11. drain well on paper towels 12. sprinkle with powdered sugar or cinamon sugar if desired. Can also be served with honey or maple syrup. My family loves it when I make cinnamon honey to dip them in. Oh for yummy. Great with a meal or just for a snack. |
