Ingredients:
21/2 cups corn kernels. fresh |
2 eggs |
2 tablespoons all-purpose flour |
1/2 teaspoon salt |
1 tablespoon sugar |
bacon drippings |
Directions:
1. Husk, silk, and wash fresh ears of corn. Cut kernels off, then cut again close to the cob, scraping to remove all kernels and corn milk. In a medium mixing bowl, beat the eggs. Add the dry ingredients and blend. Stir in the fresh corn. 2. Heat a skillet with a small amount of bacon drippings to oil the surface. Drop batter by spoonfuls into the hot skillet. Fry until the edges are crisp; then turn and brown the other side. Serve with Corn Cakes Butter. 3. Corn Cakes Butter: 4. 1 tsp hot sauce 5. 1/2 cup butter, softened 6. Combine butter and hot sauce, and mix until well blended. Serve on Fresh Corn Cakes. |
