My family likes this with chili and Southern cooking! Try it! I think you'll like it too! Ingredients:
5 ears fresh corn |
3 eggs, beaten |
3/4 cup milk |
1/4 cup plus 1-1/2 teaspoons bacon drippings |
1-1/2 tablespoons sugar, more or less to suit your taste |
1 tablespoon baking powder |
3/4 teaspoon salt |
1/2 cup plus 1 tablespoon all-purpose flour |
Directions:
1. Preheat oven to 400-degrees F. 2. Cut corn from cobs, scraping cobs to remove the pulp. 3. Combine scraped corn, eggs, milk, bacon drippings, sugar, baking powder, and salt; stir well. 4. Gradually stir in flour. 5. Heat a well-greased cast-iron-skillet in oven until very hot, about 3 minutes. 6. Pour batter into hot skillet, and put in oven, increasing heat to 425-degrees. 7. Bake for 25 minutes or until golden brown. 8. Pour batter into hot skillet |
