Eat Well Stay Well Ingredients:
1 pint vanilla ice cream |
3/4 cup pitted cherries, chopped |
1 cup pitted cherries, halved |
1/4 cup toasted almond |
1/2 cup cherry jam |
2 teaspoons cornstarch (mixed with 1 tablespoon water) |
1 teaspoon vanilla extract |
1/8 teaspoon almond extract |
Directions:
1. Let the ice cream stand in the refrigerator until softened. 2. Scoop the ice cream into a bowl and stir in the chopped cherries and 2 tablespoons of the almonds. 3. Return bowl to freezer and freeze for 1 1/2 hours. 4. Meanwhile, in a medium saucepan, combine the halved cherries, jam and cornstarch. 5. Bring to a simmer over moderate heat, stirring, and cook for 1 minute or until thickened. 6. Stir in the vanilla and almond extracts. 7. Serve the ice cream with warm or room temperature cherry sauce. Sprinkle with remaining almonds. |
