We love this soup/ Got it from a family member. Ingredients:
1 medium onion, sliced thin |
2 tablespoons olive oil |
6 cups chicken broth |
1/2 small green cabbage, shredded very fine |
salt and pepper |
1 teaspoon minced fresh thyme |
3 medium potatoes, chopped |
Directions:
1. In a large saucepan over med. Heat, saute onion in oil until translucent, about 3 min,. 2. Add broth and potatoes. Bring to boiling; cover, reduce heat, and simmer until potatoes are tender, about 15 minute 3. Puree in a blender; 2 cups at a time. 4. Return to pan, bring to a boil, add cabbage and cook 3 minute uncovered. 5. Add salt and pepper. 6. To serve; Ladle into soup bowls and garnish with thyme. |
