Cole slaw is great, but it can be ho-hum. This can even be used to top turkey or beef sandwiches. Ingredients:
1 large head of cabbage, coarsely chopped |
2 medium tomatoes, chopped |
8 small green onions, chopped |
1/2 green pepper, finely diced |
if not used for sandwich topping...1 cup cooked shrimp, cut into bite-sized pieces |
1-1/2 cups mayonnaise |
1/4 cup honey |
1 tablespoon fresh lemon juice |
1/2 teaspoon celery seed |
5 thinly sliced radishes (i happen to hate radishes, so i never add them, but if you like them like others in my family, they work in this.) |
salt and white pepper to taste (yes, there is a difference between white pepper and black pepper and to my grandmother's dismay, i only recently figured that one out!!!!) |
Directions:
1. Toss together cabbage, tomatoes, onions, pepper and radishes, if you like them. (Shrimp too if using as side dish) 2. Mix the dressing: 3. 1-1/2 cups mayonnaise 4. 1/4 honey 5. 1 tablespoon fresh lemon juice 6. 1/2 teaspoon celery seed 7. salt and white pepper 8. Combine dressing ingredients and chill 30-45 minutes before adding to cabbage salad. |
