Fresh Butter Beans With Orange, Apple and Roasted Garlic |

2 cups shelled fresh butter beans (lima) |
1 cup orange juice |
1 tablespoon brown sugar |
2 large oranges, segmented |
1 large granny smith apple, peeled, cored and finely grated |
1 tablespoon shredded fresh basil leaf |
1 teaspoon roasted garlic puree |
Directions:
1. Place lima beans in a wide, shallow saute pan large enough to accommodate the beans in a single layer. Add the orange juice, sugar and garlic puree to the pan and bring to a boil over medium-high heat. Cook until 90% of the liquid has evaporated and the lima beans have a sugar-orange glaze. 2. Remove the pan from the heat and place the beans in a mixing bowl with the remaining ingredients. Divide among six plates and serve. |
