It might just be a Pennsylvania thing, but broccoli salad is an outstanding side dish for burgers and hot dogs or even just a sandwich. Ingredients:
3 small bunches of fresh broccoli, cut into bite-sized pieces |
10 slices of bacon, or turkey bacon, cooked and crumbled |
2/3 cup raisins (which i omit completely in a batch for my mom) |
1 small red onion, chooped finely |
1 cup real mayonnaise |
1/3 cup granulated sugar |
2 tablespoons red wine vinegar |
Directions:
1. Toss together broccoli, bacon, raisins (if using), and red onion in a large bowl, set aside. 2. In a separate bowl, beat together mayonnaise, sugar and vinegar. 3. Pour prepared dressing over salad and toss to coat. 4. Refrigerate at least 2 hours before serving and try to toss occasionally. 5. You can also add peas, or shredded cheese in this and it works very well. |
