From Tammen's Treeberry Farm in Wilmington, IL. Make the most of blueberry pickin' season! Ingredients:
3 cups blueberries |
1 tablespoon butter |
3 tablespoons cornstarch |
1 teaspoon lemon juice |
3/4 cup water |
1 cup sugar |
1 dash salt |
1 (9 inch) pie crusts |
Directions:
1. Bring 1 cup blueberries and water to a boil. Boil gently for 4 minutes, add butter. Stir in sugar, cornstarch and salt. Cook slowly, stirring, until thick and clear. 2. Remove from heat, add lemon juice. 3. Pour mixture over remaining 2 cups blueberries in a medium bowl, stir gently to combine. 4. Pour mixture into pie shell. Serve chilled, or at room temperature with a dollop of sweetened whipped cream. |
