Fresh Blackberry White Chocolate Scones |

This decadent, sweet breakfast treat works great with bacon and eggs for a full, hearty meal, or just next to a cup of hot tea. They get their darker color from using raw sugar Ingredients:
2 cups flour |
1t baking powder |
1/3 cup raw sugar(or sub light brown sugar) |
1/2t fine kosher or sea salt |
6t cold butter |
1 large egg |
1t vanilla |
about 3/4 cup buttermilk |
1 cup fresh blackberries |
1/2 cup white chocolate chips |
Directions:
1. Whisk together the flour, baking powder, sugar and salt in a large bowl. Cut in the cold, shaved(or grated) butter using two knives or forks, pastry blender or fingers, until mixture resembles coarse crumbs. 2. Carefully stir in the chocolate chips and raspberries. Some will break and that's okay. :) Set aside. 3. In another bowl, whisk the eggs, buttermilk and vanilla until fully combined. 4. Make a well in the center of the dry mix and pour the egg mixture in. A rubber spatula works great. 5. Turn out the dough onto your greased/lightly floured baking surface.(either parchment on a sheet or a baking stone works great). 6. Using well-floured hands, pat the dough into an 8 inch circle, about 3/4 inch thick. 7. Cut into 8 wedges and carefully separate from each other just a bit. 8. Brush with a lil melted butter, if desired. 9. Bake at 400 for about 12-25 minutes until golden brown and done through. 10. Drizzle with a lil white chocolate upon serving, if desired. |
