Fresh Berry Cheesecake Cream Parfait |

A wonderful dessert recipe, can easily be lightened and is still delicious made with lower-fat cream cheese. Very easy and quick to prepare, great at room temperature or chilled. Sometimes I will layer the cheesecake cream and berries into individual clear glasses, but as I prefer to serve this with groups of friends, you may use a 9 clear glass bowl to highlight presentation. I created this recipe by taking my favorite things about cheesecake and combining them with fresh fruit. Ingredients:
5 (8 ounce) packages cream cheese, softened |
1 3/4 cups sugar |
2 tablespoons all-purpose flour |
1 1/2 teaspoons vanilla |
1/3 cup whipping cream |
1 teaspoon finely shredded lemon, rind of |
3 cups fresh berries (blackberries, blueberries, raspberries, strawberries) |
Directions:
1. Whip first 6 ingredients together in a large mixing bowl until smoothly blended. Spoon 1/3 of mixture into 9 clear glass bowl, top with 1 cup of berries spread evenly. Repeat two more times. 2. Chill for minimum 30 minutes in refrigerator (optional) before serving. |
