This refreshing vinaigrette is great on top of spinach salads. Ingredients:
1/4 cup chopped fresh basil |
1/4 cup raspberry vinegar |
1 teaspoon dijon mustard |
1 garlic clove, chopped |
1/4 teaspoon salt |
1/4 teaspoon pepper |
3/4 cup extra-virgin olive oil |
Directions:
1. Process first 6 ingredients in a blender until smooth. With blender running, gradually add oil in a slow, steady stream; process until smooth. |
