Fresh Basil And Tomato Quiche With 3 Cheeses |

This is a wonderful crustless quiche that super easy, gooey and cheesey! Ingredients:
1 cup shredded cheddar cheese |
1 cup shredded monterey jack cheese |
1 cup shredded swiss cheese |
1 tablespoon all purpose flour |
6 eggs, beaten |
1/2 cup half & half |
3 roma tomatoes, sliced in circles |
1/2 cup fresh chopped basil leaves |
Directions:
1. Preheat oven to 350 degrees. 2. Coat an 8 inch quiche dish with non stick spray. 3. Combine cheeses. 4. In a small bowl toss 1 cup of combined cheeses with flour. 5. Place the cheese/flour mixture in bottom of quiche pan. 6. Add the rest of the cheese on top. 7. Lightly wisk eggs together, add half & half and wisk till frothy. 8. Pour egg mixture over cheeses. 9. Sprinkle shredded basil leaves on top of egg mixture and lay tomato slices on top. 10. Bake 35-40 minutes until center is nicely browned and domed. 11. Let sit out for at least 20 minutes so eggs will set. |
