Fresh Asparagus Casserole Bake |

An easy casserole that will help you get some veggies and whole grains! Ingredients:
1 1/2 cup water |
1 1/2 cup chicken stock (i used broth) |
1 tsp. salt |
1 lb. asparagus |
2 tbsp. butter |
1 small onion |
3 cloves minced garlic |
1 cup uncooked long grain rice |
1/2 cup diced red bell pepper |
1/2 cup grated parmesan cheese |
Directions:
1. Mix all ingredients, pour into 2 quart casserole and cover. Bake in oven at 400 degrees for 20 minutes. Stir and then bake another 20 minutes. 2. **FYI...I don't know if my oven is just weak, or what, but I had to drain some of the water/broth out and still had to bake it for over an hour!** |
