FRESH ASPARAGUS AND WILD MUSHROOMS This recipe came from an estate sale. I obtained it when I purchased the family collection from the Bromsey Estate in Jacksboro, Texas in 1990.
Ingredients:
1 tablespoon olive oil
1 pound wild mushrooms cut into quarters
2 garlic cloves peeled and sliced
1 splash dry white wine
1 bunch asparagus cut in 2 segments blanched
1 cup olives pitted and chopped
1 teaspoon toasted sesame seeds
1 teaspoon fresh thyme leaves
1/4 teaspoons alt
1/2 teaspoon freshly ground black pepper
Directions:
1. Heat olive oil until it begins to smoke then add mushrooms and wait 10 seconds before tossing.
2. Cook for 3 minutes then add garlic and deglaze pan with a splash of wine.
3. Add asparagus and heat through then add olives, sesame seed, thyme, salt and pepper.
