Fresh Apple Cinnamon Nutmeg Cake |

Moist, yummy cake that freezes well and warmed in the microwave is just as good as when it came out of the oven. In my oven, it takes 50 minutes. My family likes this as a mid-morning snack. Makes 24 (2 1/4 x 2 inch) servings. Ingredients:
1/2 cup butter |
1 1/2 cups sugar |
1 cup low-fat plain yogurt |
1 egg |
2 teaspoons baking soda |
1 teaspoon ground cinnamon |
1/2 teaspoon salt |
1/4 teaspoon ground nutmeg |
3 cups cored and chopped apples (1 lb.) |
1 cup chopped nuts |
2 1/2 cups flour |
Directions:
1. Cream butter and gradually add sugar. 2. Add yogurt and egg and beat until fluffy. 3. Combine dry ingredients and stir into creamed mixture. 4. Add apples and nuts and mix until blended. 5. Pour batter into a greased and floured 13 x 9 x 2 inch cake pan. 6. Bake at 350 degrees for 50-60 minutes or until a wooden pick inserted near center comes out clean. |
