Fresh Apple Cake With Rum Sauce |

Yum! Hate to admit it, but I really like this for breakfast. :) Ingredients:
1/2 cup butter, softened |
2 cups sugar |
2 eggs |
2 cups all-purpose flour |
1 teaspoon baking powder |
3/4 teaspoon baking soda |
1/2 teaspoon salt |
1/2 teaspoon ground nutmeg |
1/2 teaspoon ground cinnamon |
3 cups cooking apples, peeled and chopped |
1 1/2 cups pecans, chopped |
1 cup sugar |
1/2 cup butter |
1/2 cup half and half cream |
1 teaspoon rum extract |
Directions:
1. Cake:. 2. Cream the butter; gradually add the sugar, beating well at medium speed of an electric mixer. Add eggs, one at a time, beating well after each addition. 3. Combine flour and the next 5 ingredients; add to the creamed mixture, beating until blended. Stir in the apple and pecans. 4. Pour batter into a greased and floured 13 x 9 x 2 inch baking pan. Bake at 325 degrees for 50 to 55 minutes or until a wooden pick inserted in the center comes out clean. Let cool completely in the pan on a wire rack. Serve with Hot Buttered Rum Sauce. 5. Hot Buttered Rum Sauce:. 6. Combine the sugar, butter, and half and half in a saucepan; cook over low heat, stirring occasionally, until sugar dissolves. Remove from heat, and stir in the rum extract. |
