From The Eyes of Texas Cookbook. From Ruth Talafuse in Wharton, TX. The Eyes of Texas was a television show I remember from my childhood in the 70's. This recipe is one of my favorites. This recipe calls for 6 grated fresh apples. I typically use granny smith apples. Ingredients:
6 apples, peeled and grated |
2 cups sugar |
1 cup chopped pecans |
2 eggs, beaten |
2 teaspoons vanilla |
1 cup vegetable oil |
3 cups flour |
1/2 teaspoon salt |
2 teaspoons baking soda |
1 teaspoon cinnamon |
Directions:
1. Preheat oven to 350 degrees. Mix apples, sugar and pecans and let stand for 1 hour, stirring often. Add eggs, vanilla and oil. Sift all other ingredients together and add to the first mixture. Pour into a large tube pan that has been greased and floured. Bake 1 hour and 15 minutes. |
