This can also be made into 6 large muffins Ingredients:
1/2 cup vegetable oil |
1 cup granulated sugar |
1 egg, lightly beaten |
1 teaspoon vanilla |
1/2 teaspoon baking soda |
1/4 teaspoon salt |
1/2 teaspoon ground cinnamon or more to taste |
1 1/2 cups peeled and chopped apples (2-3 apples) |
1 1/2 cup all-purpose flour |
1/2 cups chopped nuts, optional |
1/4 cup chocolate chips (optional) |
Directions:
1. Preheat oven to 325 2. Grease and flour a 9x5 inch loaf pan 3. In a medium mixing bowl, stir together oil and sugar 4. Mix in egg 5. Add vanilla, baking soda, salt and cinnamon 6. Mix well 7. Fold in apples 8. Stir in flour in three additions 9. Batter will be thick 10. Stir in nuts and chocolate chips 11. Spoon batter into the pan 12. Level the batter with the back of a spoon 13. Bake for 45-55 minutes 14. If making muffins bake for 25-30 minutes |
