Ingredients:
1 tablespoon extra-virgin olive oil |
1 tablespoon cider vinegar |
1/2 teaspoon salt |
1 garlic clove, minced |
2 beets |
2 cups shredded red cabbage |
Directions:
1. Combine first 4 ingredients in a small bowl; set aside. 2. Peel beets under running water to prevent hands from staining; shred beets. 3. Combine cabbage and beets in a bowl; add oil mixture, and toss. Serve immediately. |
