This was quite a find when I found myself hosting a Crenshaw family brunch on short notice. We made a few rashers of bacon, sausages for the multitudes, a couple breakfast casserole and this one. The kids couldn't believe their stomachs! Read more ! It may be a tad sweet for the adult palate.
Ingredients:
12 cups bread cubes
8 ounce package cream cheese, cubed
8 large eggs
1/4 cup pure maple syrup
2 1/2 cups milk
6 tablespoons butter, cubed
Directions:
1. Butter a 3-quart baking dish.
2. Preheat oven to 325 F.
3. Place half the bread cubes into the buttered casserole dish.
4. Top with cream cheese.
5. Add the rest of the bread cubes.
6. Combine the eggs, milk, butter and syrup in the food processor.
7. Pulse to blend well.
8. Pour egg mixture evenly over the bread cubes.
9. Lightly press with a spatula to moisten all cubes.
10. Cover with plastic wrap.
11. Refrigerate for 2 to 24 hours.
12. Bake for 35 to 40 minutes.
13. Let stand 10 minutes prior to serving.
