Don't throw out that stale bread! This is a recipe that you can use either fresh or stale bread to make. It is a healthy alternative to the traditional French toast. You can substitute the yogurt for low fat ricotta cheese and use whatever fruit your family prefers. Ingredients:
2 eggs |
65 ml skim milk |
30 ml honey |
1/2 teaspoon cinnamon |
8 slices whole wheat bread |
250 ml greek yogurt |
65 ml strawberries, sliced |
65 ml blueberries |
65 ml raspberries |
65 ml blackberries |
75 ml maple syrup |
Directions:
1. Beat eggs, honey, cinnamon and milk together. Place in a flat-bottom dish such as a lasagna pan. 2. Cut the crusts off the bread. 3. Lightly spray muffin tins with oil. 4. Place the bread slices in the egg mixture, flipping it and soaking up the mixture. 5. Gently press the moisten bread into the muffin tins to roughly form a cup shape. 6. Cook in 375'F oven for about 10 to 12 minutes. Remove from oven and add a dallop of greek yogurt, sprinkling of mixed berries and a light drizzle of maple syrup. |
