French-Style Potato Salad |

recipe calls for 2 shallots thinly sliced. the system couldn't figure that out so I changed it to 1/4 cup. Ingredients:
3 lb red potatoes |
1/4 c white wine |
1/4 c white wine vinegar |
3 t dijon mustard |
2 t olive oil |
1/3 c parsley, chopped |
1/4 c shallots, thinly sliced |
Directions:
1. Boil potatoes in 4 cups chicken broth. (Add water, if needed, to cover potatoes by 1 inch.) Boil until tender, about 25 minutes. Drain Potatoes. 2. While still warm, peel and slice potatoes into 1/2-inch-thick slices. Sprinkle wine and vinegar over the slices and toss gently. Keep warm in a large bowl. 3. In a small bowl, combine salt, pepper and mustard; whisk in olive oil and then stir in chopped parsley. Pour over potatoes and shallots and gently toss until coated with dressing. 4. Serve at room temperature or, if refigerated, allow to come to room temperature before serving. |
