Great for a side to week night dinner Ingredients:
1 baby cos lettuce, shredded |
20 g butter |
1 tablespoon plain flour |
1 cup chicken stock |
1 1/2 cups frozen peas |
2 tablespoons fresh mint, chopped |
Directions:
1. Melt butter in pot over medium heat. 2. Stir in flour till smooth and cook 1 minute. 3. Slowly whisk in chicken stock. 4. Stir till thick. 5. Stir in peas and shredded lettuce. 6. Cook 3 minutes till lettuce wilts. 7. Add mint and serve. |
