This is a fantastic pea recipe that comes from my mother's collection. She made this for us on a regular basis and we loved them, in fact it is one of my all time favorite vegetable recipe. Enjoy Ingredients:
6 strips bacon cut into 1/4 wide dices |
12 small pearl onions peeled |
1/2 head boston lettuce cut in coarse julienne strips |
1-1/2 pounds fresh green peas |
1 teaspoon salt |
3 tablespoons granulated sugar |
1/8 teaspoon freshly ground black pepper |
1 teaspoon chicken bouillon |
2 cups water |
3 tablespoons flour |
2 tablespoons unsalted butter |
Directions:
1. In saucepan over medium heat fry bacon slowly until half done then add onions and lettuce. 2. Stir and let simmer 5 minutes then add peas, salt, sugar, pepper, bouillon and water. 3. Continue to cook slowly until peas are heated through and done to desired firmness. 4. Meanwhile in a small skillet, make a roux of butter and flour. 5. Add roux to peas and bring to a boil then remove from heat and stir once before serving. 6. Sprinkle with chopped parsley and serve while warm. |
