A twist on roasted red potatoes Ingredients:
12 small red potatoes, quartered |
2 garlic cloves, coarsely chopped |
1/3 cup dijon mustard |
1/4 cup butter, melted |
1/8 cup fresh parsley, chopped |
Directions:
1. Preheat oven to 350 degrees F. 2. Place potatoes and garlic in a lightly greased roasting pan; cover tightly with foil. 3. Bake for 45-60 minutes or until potatoes are just fork-tender. 4. In a medium bowl, blend mustard, butter and parsley; toss with hot potatoes. 5. Bake uncovered for 15 more minutes. 6. Serve immediately. |
