FRENCH QUARTER BEIGNETS This recipe came from an estate sale. I obtained it when I purchased the family collection from the Poe Estate in Justin, Texas in 1987. Ingredients:
2 cups flour |
1 teaspoon salt |
1 tablespoon baking powder |
1 teaspoon ground cinnamon |
2 eggs |
1/4 cup granulated sugar |
3/4 cup milk |
1/2 teaspoon vanilla extract |
oil for deep frying |
confectioner’s sugar for coating |
Directions:
1. To make dough sift flour, salt, baking powder and ground cinnamon into large mixing bowl. 2. Cover and set aside until required. 3. In a separate bowl beat together eggs, sugar, milk and vanilla extract. 4. Mix this into the flour mixture to form a dough. 5. Turn dough into a lightly floured surface and knead until smooth and elastic. 6. Roll out to a circle 1/4 thick. 7. Slice diagonally into diamonds about 3 long. 8. Heat oil in a deep fryer to 375 then fry beignets in oil a few at a time turning once. 9. Remove with slotted spoon and drain well on kitchen paper towels. 10. Before serving sprinkle beignets with confectioner’s sugar then serve warm. |
