A very good French recipe. Serves 4 as a side dish. Ingredients:
12 new potatoes (or more) |
1 cup finely chopped green onion |
1 1/2 teaspoons salt |
1/2 teaspoon pepper |
4 tablespoons olive oil |
1 tablespoon wine vinegar |
1/4 cup chopped parsley |
1 teaspoon chopped chives |
Directions:
1. Cook new potatoes in peel, & peel while warm. 2. Cut into bit-size pieces. 3. Toss while warm with onions, salt, pepper, & olive oil. 4. Add vinegar. 5. Toss again & cool at room temperature, NOT in refrigerator. 6. Just before serving, toss again & add parsley & chives. |
