My interpretation of a lovely classic, peas and lettuce stewed together. Great with oven roasted potatoes and - if you must have meat - grilled chicken. Ingredients:
1 packet of frozen peas |
1 butterhead lettuce |
1 shallot |
100 ml of stock |
butter |
olive oil |
salt |
pepper |
pinch of sugar |
Directions:
1. Fry the shallot in a big cast iron pot in oil and butter until tender. 2. Add the washed and shredded lettuce, allow this to reduce. 3. Add the peas and stock and gently simmer for 20 minutes. 4. Add salt, pepper and some sugar. 5. NB for the photo: All rights reserved. |
