French Pancakes With Fruit Sauce |

From the 1941 Home Economic book, Everyday Foods. Ingredients:
pancakes |
2/3 cup flour |
1 tbs corn meal |
1/4 tsp salt |
1 egg |
1 cup milk |
1 tbs brown sugar |
fruit sauce |
1 cup orange juice |
1 tbs lemon juice |
2 tbs butter |
1/4 cup mashed banana |
2 tbs brown sugar |
1/4 tsp cinnamon |
2 lg oranges, sectioned |
Directions:
1. Pancakes: Mix dry ingredients, add milk and egg unbeaten; beat with a rotary beater until thoroughly mixed; drop spoonfuls on a lightly oiled griddle and cook until kight brown on each side. These should be very thin. Roll and serve immediately, with hot fruit sauce. 2. Fruit sauce: Heat all ingredients except orange sections for 5 minutes, without allowing to boil; add orange sections and pour around hot French pancakes. |
