French onion soup Its hard to find a good one This is mine based on many I've tried Ingredients:
8 medium onions sliced/julienned |
1 1/2 - 2quarts beef stock (depends on size of soup bowls you will use) |
1 cup red wine, port, or brandy |
4 t butter |
1-2 t flour (optional if you want a thicker broth) |
salt and pepper to taste |
4 cups grated gruyere cheese (1/2 cup per serving or more if you like) |
1 cup grated parmesan cheese |
french bread cut into slices that will fit on bottom of bowls |
Directions:
1. In 1 gallon pot fry onions in butter on low to med heat until browned, stir frequently . Lower heat is better, might take 20 mts or so. Don't burn. 2. add flour if you want to have a thicker soup, stir for a few mts to cook 3. add stock, wine, salt and pepper 4. bring to a boil then cover and simmer for 30 mts 5. Toast french bread slices the way you find easiest 6. add them to bottom of bowls 7. sprinkle with parmesan 8. ladel soup over bread 9. cover with about 1/2 cup of gruyere 10. I do the last 2 steps at the table when course is due for serving |
