An great, easy and tasty version of the old time french classic. Not sure where this family recipe came from, but believe me it tastes fantastic. You can use gruyer cheese or a sharp cheddar for this recipe. A pre-packaged beef stock from your local supermarket it a great shortcut for this recipe. Ingredients:
6 medium onions, thinly sliced |
1 tablespoon butter |
2 tablespoons plain flour |
6 cups beef stock |
6 slices french bread (1cm thick) |
1 cup grated gruyere cheese |
salt |
black pepper |
Directions:
1. Gently cook onions and butter in a large pan for about 30 minutes, stirring occasionally making sure they do not burn. The onions should be soft and a rich golden colour. 2. Sprinkle in flour, stir well then add stock. Stir until boiling, lower the heat and simmer gently for about 20 minutes. 3. Place bread slices on a baking tray, bake in a moderate oven for about 10 minutes or until crisp. 4. Season soup to taste with salt and black pepper and pour into a soup tureen or into indivual bowls. 5. Top with bread slices, sprinkle with cheese and bake a further 10 minutes in a moderate oven. |
