I have had this recipe for years and don't remember where I got it. Some times I like to replace the sliced onions with pearl onions instead. Ingredients:
4 medium onions, sliced |
3 tablespoons butter or 3 tablespoons margarine |
2 tablespoons flour |
salt, to taste |
1 dash pepper |
3/4 cup beef bouillon |
1/4 cup sherry wine |
1 1/2 cups croutons, plain |
2 tablespoons butter, melted |
1/2 cup swiss cheese, shredded |
3 tablespoons parmesan cheese, grated (optional) |
Directions:
1. Cook onions in butter, just until tender. 2. Blend in flour, salt, and pepper. 3. Add bouillon and sherry. 4. Cook and stir until thickened and bubbly. 5. Turn into 1 quart casserole. 6. Toss croutons with 2 tablespoons melted butter and spoon on the onion mixture, evenly. 7. Sprinkle with Swiss cheese and Parmesan if desired. 8. Put in oven under broiler and broil for about 1 minute until the cheese melts. 9. Serve immediately. |
