Ingredients:
4 cups water |
1 cup lentils |
1 cup parsley, finely chopped |
6 scallions, finely chopped |
1 sweet red pepper, chopped |
1 yellow pepper, chopped |
3 tablespoons sesame oil |
3 tablespoons vinegar |
3 tbs lime juice |
2 tablespoons soy sauce |
1/2 teaspoon crushed red pepper |
1 teaspoon salt |
1/2 teaspoon fresh ground black pepper |
Directions:
1. Bring the water and lentils to a boil in a medium pot. 2. Reduce the heat, cover, and simmer for 45 minutes. 3. Drain the water and transfer the lentils to a serving bowl. Let cool. 4. Combine with the vegetables, seasonings, and spices and toss gently. 5. Serve at room temperature |
