A creamy lentil salad that is incredibly high in fiber! Great served warm or cold. Ingredients:
2 cups green lentils |
2 1/2 cups water |
1/2 tsp salt |
1/4 tsp garlic powder |
1/4 cup onion, diced |
1/4 cup zucchini, diced |
1/4 cup bell pepper, diced |
1/4 cup carrot, diced |
1/4 cup olive oil |
1/8 cup red wine vinegar |
1/4 tsp tarragon |
1/4 tsp parsley |
1 ounce soft goat cheese, crumbled |
Directions:
1. Mix lentils, water, salt, and garlic powder, and bring to a boil. Reduce heat and simmer for 10 minutes. 2. Add vegetables and simmer another 15 minutes, until lentils are softened. 3. Mix olive oil, vinegar, tarragon and parsley in a bowl to form dressing. Toss lentils with dressing and add goat cheese. 4. Serve warm or cold. |
