This recipe uses fresh organic garlic and herbs with organic tomatoes from the summer garden, it is both nutritious and delicious
Ingredients:
1 cup organic french lentils
8 ripe organic roma tomatoes quartered
2 medium organic onion peeled and chopped
6 cloves of organic purple garlic
1 cup of fresh organic basil
1/2 cup organic pine nuts
4 tablespoons of organic olive oil
2 teaspoons of sea salt
2 tablespoons of fresh organic cracked peppercorns
1-cup organic whole wheat couscous
2 quarts of vegetable broth
2 tablespoons of nutritional yeast
Directions:
1. Crush the peppercorns with a motor and pestle
2. In a deep fryer, place the garlic and the olive oil and cook until garlic is tender.
3. Add the Pine nuts sauté for another 2 minutes add the peppercorns
4. Add the basil and the tomatoes and simmer for 20 minutes remove and set aside.
5. In the same pan, add the onions and sauté until translucent
6. Add the vegetable broth and the lentils and simmer until lentils are tender.
7. Add the Couscous and simmer until the liquid is absorbed
8. Add the nutritional yeast and sea salt to taste
9. In a large bowl, combine the tomato and basil mixture with the couscous.
10. Serve into individual bowls and garnish with a sprig of tarragon
