French Fry Eggplant

Eggplant, cut like French fries, tossed in white self rising corn meal, seasoned with salt and pepper then fried until golden brown and crisp!
Ingredients:
eggplant
salt
water
white self rising corn meal
cayenne, paprika, optional
crisco for fryin
Directions:
1. Peel and cut the eggplant into French fry strips
2. Soak the eggplant in salted water for 1 hour or even a little more
3. Drain WELL
4. Toss in the corn meal that has been seasoned with a little cayenne and paprika
5. Fry in Crisco on medium high heat until golden brown and crisp
6. Drain on paper towels
7. Serve immediately
8. My mother sometimes cut a small eggplant in *rounds* , soaked it in salted water, and tossed it cornmeal before frying
