This is a very simple, but rich coconut pie and the results are out of this world. I got the recipe from of a community cookbook. Ingredients:
1 9 inch pie shell, unbaked,ready or homemade (not deep dish) |
1/2 cup butter, softened |
1 dash salt |
3 eggs, slightly beaten |
1 tablespoon white vinegar |
1 1/2 cups sugar |
1 1/4 cups coconut (i use angel flake, sweetened) |
Directions:
1. Put all ingredients into a mixing bowl and mix well with a mixer. 2. Pour ingredients into unbaked pie crust. 3. Bake at 350 degrees for 45 to 60 minutes. 4. Serve either warm or at room temperature. |
