French Chicken With Balsamic Vinegar (Crock Pot) |

Nice and saucy chicken makes a one-dish meal for the crockpot. Ingredients:
2 1/2 lbs boneless skinless chicken breast halves (about 6) |
1 (14 1/2 ounce) can diced tomatoes, undrained |
1 (15 1/2 ounce) can cannellini beans, rinsed and drained |
1 large yellow bell pepper, chopped coarsely |
1 1/2 tablespoons balsamic vinegar |
1 teaspoon dried oregano |
1 tablespoon garlic, minced |
1/2 teaspoon dried basil |
1/2 teaspoon salt |
1/4 teaspoon black pepper |
1 tablespoon olive oil |
2 tablespoons parsley, chopped |
Directions:
1. Place chicken in the bottom of the crockpot. 2. Combine remaining ingredients, except parsley, and place on top of chicken. 3. Cover crockpot and cook on low for 6-8 hours or until chicken is cooked through. 4. Serve garnished with chopped parsley. |
