Clafoutis is a rustic dessert from France. A sweet custard filling surrounds fresh cherries. Recipe and photo from Williams-Sonoma Ingredients:
4 eggs, separated |
2/3 cup sugar |
6 t all -purpose flour |
1 cup heavy cream |
1/2 tsp salt |
1 1/2 lbs fresh cherries, pitted, or 1 1/4 lb frozen cherries, thawed and drained (note: you can buy a cherry pitter for around $10-12 at a kitchen store) |
1/2 tsp lemon zest |
ice cream, for serving and powdered sugar, for dusting |
Directions:
1. Preheat oven to 375 degrees 2. Butter a large baking dish 3. In a large bowl, combine egg yolks and 1/3 cup sugar; beat with mixer on medium-high until ribbons form, about 8 minutes 4. Add flour, vanilla and cream 5. Reduce speed to low; beat until completely blended, stopping mixer occasionally to scrape down sides of bowl 6. In small bowl, using handheld whisk, beat egg whites and salt about 30 seconds 7. Add whites to batter and beat with mixer on low speed until incorporated, 1-2 minutes 8. Preheat prepared baking dish in oven for 4-5 minutes 9. In bowl, stir together cherries, 1/3 cup sugar and zest 10. Remove pan from oven 11. Pour in cherries and top with batter 12. Bake until clafoutis is set in middle, 30-35 minutes 13. Serve warm over ice cream and dust with powdered sugar 14. Life is just a bowl of cherries.... |
