This is an awesome soup especially on a cold day when you want comfort food. I have made this on several occasions and always enjoy it. Ingredients:
1 pound dried peas |
1/4 cup grated carrots |
8 cups water |
1/4 cup fresh parsley chopped |
1/2 pound salt pork |
1 small bay leaf |
1 large white onion chopped |
1 teaspoon dried savory |
1/2 cup chopped celery |
1 teaspoon salt |
2 teaspoons freshly ground black pepper |
Directions:
1. Wash and sort peas then soak in cold water overnight. 2. Drain and place in a large pot then add water, parsley, salt pork, onion, celery, carrots, parsley, bay leaf, savory and salt. 3. Bring to a boil, reduce heat and simmer 2 hours. 4. Remove salt pork then chop and return to soup. 5. Discard bay leaf and season with salt and pepper. |
