Ingredients:
1/3 cup shortening |
1/2 cup sugar |
1 egg |
1 1/2 cups sifted all-purpose flour |
1 1/2 teaspoons baking powder |
1/2 teaspoon salt |
1/4 teaspoon ground nutmeg |
1/2 cup milk |
1/2 cup sugar |
1 teaspoon ground cinnamon |
1/4 cup plus 2 tablespoons butter or margarine, melted |
Directions:
1. Cream shortening; gradually add 1/2 cup sugar, beating until light and fluffy. Add egg, and mix well. 2. Sift together flour, baking powder, salt, and nutmeg; add to creamed mixture alternately with milk, beginning and ending with dry ingredients. 3. Spoon batter into greased muffin pans, filling two-thirds full. Bake at 350° for 25 minutes or until lightly browned. 4. Combine 1/2 cup sugar and cinnamon; stir well. Remove muffins from pans while still warm; roll each in melted butter, and then in sugar-cinnamon mixture. Cool. |
