I remember mom making these muffins when we were little. Before we would eat the muffins we would always dip the tops again. So yummy. My brother and I were reminiscing about these muffins at Christmas. Ingredients:
for muffins |
1 1/2 cups flour |
1/8 tsp salt |
1/2 cup sugar |
1 egg |
1/2 tsp baking powder |
1/2 cup milk |
1/4 tsp ground nutmeg |
1/3 cup butter, melted |
for topping |
1/4 cup butter, melted |
1/2 tsp ground cinnamon |
1/4 cup sugar |
Directions:
1. For muffins: 2. In a mixing bowl combine flour, sugar, baking powder, nutmeg and salt. 3. Make a well in the center of the dry ingredients. 4. In another bowl beat egg slightly; stir in milk and melted butter. 5. Add egg mixture to flour mixture. 6. Stir just until moistened (the batter may be lumpy). 7. Lightly grease muffin cups or use muffin cup liners. 8. Fill cups about 2/3 full with batter. 9. Bake at 350 for 20-25 minutes or until muffins are golden. 10. For topping: 11. While muffins are baking combine sugar and cinnamon in a shallow bowl. 12. Immediately dip tops of hot muffins into the melted butter, then in the cinnamon sugar mixture until coated. |
