These muffins are quick and easy to make and they have the flavor of doughnuts without all of the work! They make a great addition for a brunch. Ingredients:
1 1/2 cups 2 tablespoons flour |
3/4 cup sugar |
2 teaspoons baking powder |
1/4 teaspoon salt |
1/4 teaspoon ground nutmeg |
1/2 cup milk |
1 egg, beaten |
1/3 cup butter, melted |
1 teaspoon ground cinnamon |
1/2 cup sugar |
1/2 teaspoon vanilla extract |
1/3 cup butter, melted |
Directions:
1. Combine first 5 ingredients. 2. Add milk, egg and 1/3 cup of melted butter. 3. Mix thoroughly. 4. Grease and flour muffin tins. 5. Fill 1/2 full and bake at 400 degrees for 20 minutes or lightly browned. 6. Remove from pan immediately. 7. Dip in remaining 1/3 cup melted butter. 8. Roll in mixture of the sugar, cinnamon and vanilla. 9. Serve warm. |
