200g french beans/baby fine beans, top and tail removed, and then finely chopped |
3 eggs, beaten, and mixed with 3/4 tbsp light soy sauce |
1 tbsp chopped garlic |
1 tbsp olive oil |
coriander, for garnishing |
Directions:
1. Heat oil in wok and stir fry garlic till light brown. 2. Add chopped beans and stir fry over moderate high heat for 5 minutes. 3. Pour the egg mixture slowly and stir thoroughly till the eggs are well cooked and no longer wet. Served with rice. |
