This recipe comes from an estate sale that I purchased several years ago. I have not made it but it sounds good. Enjoy Ingredients:
2 cups dried flageolet beans |
1 tablespoon sherry vinegar |
1 tablespoon minced garlic |
2 teaspoons minced tarragon |
4 tablespoons thinly sliced shallots |
1 tablespoon olive oil |
Directions:
1. Rinse beans then place in pot with water to cover by 2 inches. 2. Bring to boil then partly cover and simmer for 2 hours. 3. Let cool then stir in vinegar, garlic, tarragon, olive oil and shallots. 4. Serve at room temperature or chill for one hour. |
