Yes, you can freeze beans. No need for them to go to waste. Recipe courtesy of The Settlement Cookbook. Ingredients:
green beans (or limas, snap, wax, or soybeans) |

Directions:
1. Limas, Shelll: Shell and blanch and sort according to size or blanch in pods (shell after cooling). Small beans or pods, blanch for 2 minutes. Medium beans or pods blanch for 3 minutes. Large beans or pods blanch for 4 minutes. 2. Snap, green, or wax beans: Pick over stringless beans. Wash, remove ends. Cut in 1 to 2 inch lengths or in julienne strips.Small beans or pods, blanch for 2 minutes. Medium beans or pods, blanch for 3 minutes. Large beans or pods, blanch for 4 minutes. 3. Soybeans: Select and wash. Blanch in pods for 5 minutes and cool. Squeeze beans out of pods. 4. Cooked foods remain at top quality for 3-6 months. After 6 months the food is still safe although quality may decline. |
